Summer Fruit Salad

Using the fresh fruit of the summer season, this salad is a delicious mix of peaches, plums, grapes and apples. Adding cucumber and celery and topping it with walnuts makes it a real treat!

Summer Fruit Salad (Serves 2-4)

  • 1 cup peaches, diced
  • 1 cup plums, diced
  • 1 cup grapes
  • 1 apple, diced
  • ½ cup dried cranberries
  • ½ cup walnuts
  • ½ cup celery, diced
  • ½ cup cucumber, diced
  • juice of 1 lemon

Add the fruit, vegetables and walnuts to a large mixing bowl. Squeeze the lemon over it and mix well.

Serve as it is or over a bed of lettuce.
