Quick & Easy Broccoli & Cauliflower

We've been playing with creating quick and easy dishes where you can walk in the house and have dinner ready in minutes. This one is our latest using frozen broccoli and cauliflower. That makes it quick.

To zip up the flavour, we did this dish with a seasoned tahini sauce. That adds a little time, but not all that much. If you're in a real hurry, you can simply sprinkle the seasonings over the veggies and start roasting.

 

We served this scrumptious dish with a simple lettuce and tomato salad with balsamic vinegar on top. So delicious. We hope you try it.

Quick & Easy Broccoli & Cauliflower (20 minutes with an air fryer – Serves 2-3)

  • 1 tablespoon tahini
  • 3 tablespoon nutritional yeast
  • 1 teaspoon maple syrup
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 2 teaspoons paprika
  • 1 teaspoon chili powder (optional)
  • ¼ teaspoon sea salt
  • dash of pepper
  • ¼ cup + 1 tablespoon purified water (equivalent of 5 tablespoons total)
  • 330 g package of frozen broccoli (1½ cups of fresh if prepping fresh)
  • 330 g package of frozen cauliflower (1½ cups of fresh if prepping fresh

The quickest way to cook these is in an air fryer but they turn out great baking in the oven too. If baking in the oven, preheat to 400º F.

Add all ingredients except the water and veggies to a medium sized bowl and mix well. It will be a thick paste.

Add the water and it will become like a heavy cream.

Add the veggies and mix well to coat them evenly.

Air Fryer method: Put the veggies into the fryer pan with parchment paper (less clean up this way) and fry for 15 minutes at 375º F.

Oven method: Put the veggies into an 8” x 12” parchment lined baking dish and bake for 20-30 minutes.

NOTE: For those who don’t like the taste of nutritional yeast, this is great without it, too. If you leave it out, you’ll want to reduce the water to 3 tablespoons.
