Fuller Sunbar

We put this recipe together after eating a couple of bars we like that are commercially made. A Fuller Bar and a Sunbar.

And because we're always looking for how to have delicious food without the processed ingredients and additives so common in commercial food today, we created a version that is WFPB and SOS-free. We think we hit the nail on the head.

Fuller Sunbar (There is a Chocolate version below)

  • 1 tablespoon ground flax
  • 1 tablespoon chia seeds
  • 1/3 cup filtered water
  • 14 dates
  • ½ cup dried cranberries
  • 1 banana
  • 1 apple, diced
  • ¼ cup almond butter
  • ¾ teaspoon cinnamon
  • 2½ cups rolled oats
  • ¼ cup pecans
  • 1/3 cup sunflower seeds
  • ¼ cup pumpkin seeds
  • ½ cup coconut

Make flax/chia egg by adding the flax and chia to the water, stirring the seeds in well and set aside.

Add dates and ¼ cup of the cranberries to food processor and process to a coarse chunkiness.

Add banana, apple, almond butter and cinnamon and process well.

Add oats and flax/chia egg and blend in well.

Pour out into a mixing bowl and add the nuts, seeds and coconut. Mix thoroughly.

Crumble the batter evenly into an 8” x 8” baking dish and press LOOSELY to cover the dish. Bake at 350º for 20 minutes.

Let cool for 20 minutes before cutting the bars.

Chocolate Fuller Sunbar

  • 1 tablespoon ground flax

  • ½ cup dried cranberries
  • 1 banana
  • 1 apple, diced
  • ¼ cup almond butter
  • ¼ cup raw cacao
  • ¾ teaspoon cinnamon
  • 2½ cups rolled oats
  • ¼cup pecans
  • 1/3 cup sunflower seeds
  • ¼cup pumpkin seeds
  • ½ cup coconut

Make flax/chia egg by adding the flax and chia to the water, stirring the seeds in well and set aside.

Add banana, apple, almond butter, cacao and cinnamon and process to a medium chunkiness

Add oats and flax/chia egg and blend in well.

Pour out into a mixing bowl and add the nuts, seeds and coconut. Mix thoroughly.
