Farm Bounty Salad

The salad was inspired by the amazing, fresh-picked veggies we just picked up from the farm. There's nothing like the flavour of vine-ripened food like you can get off the farm or at farmer's markets.

Farm Bounty Salad (Serves 2)

  • 3 large tomatoes
  • 2 - 6-inch to 8-inch-long cucumbers, peeled
  • ¼ red onion, thin slices
  • Balsamic vinegar
  • Ground black pepper to taste

In two large 9-inch salad bowls, slice the tomatoes to cover the bottom of the bowl. Now slice the cucumbers into the two bowls. Add the thin red onion slices on top. Sprinkle balsamic vinegar over vegetables and give each a grind of black pepper.

This salad is super quick and easy. It was inspired after we came home from our friend’s farm with several boxes of the most amazing tomatoes, cucumbers and red onions. There’s nothing like vine ripened tomatoes and cucumbers. So, we recommend making this salad when you can get fresh picked tomatoes and cucumbers from a farmer or farmers’ market. The taste and freshness really make this.
