Barley with Veggies & Olive Salad

The heartiness of barley and brown rice combined with the freshness of red peppers, carrots, olives and capers makes this a uniquely flavorful dish. It works well as a side dish and we love it as a one dish meal.

Barley with Veggies & Olive Salad (Serves 3-4)

  • 1 small head of lettuce
  • 3 cups cooked barley and brown rice
  • 1 red bell pepper, diced
  • 4 carrots, diced in small pieces
  • 3 celery stalks, cut on diagonal
  • 1/2 small red onion, diced
  • 1/2 cup Kalamata olives
  • 3 tablespoons capers

Make a bed of lettuce on your serving plates.

Add the remaining ingredients to a big bowl and mix well.

Dish on top of the lettuce and serve.
