Dr. Fuhrman's mother underlines so strongly the value of eating whole food, plant based (WFPB), especially when it focuses on the high nutrient-dense foods highlighted in the Nutritarian diet.
Even in our 70s, 80s, and 90s, the body still responds to nutrient-dense, healing foods.
Dr. Fuhrman has often said "The human body is a self-healing organism. If we stop injuring it and start nourishing it, it knows what to do."
Like we said in our blog on Brain Health, nutrient-dense diets lower inflammation and support brain function, reducing risk of dementia and cognitive decline. This is very evident in Joel's mother, isn't it?
Not only is her mind sharp, but she has also been able to get off all of her medications. Many elderly people assume that multiple medications are just part of aging. But Dr. Fuhrman’s mom’s experience shows that a whole food, plant-rich diet can dramatically reduce, and often eliminate, the need for medications for chronic illnesses like high blood pressure.
One of the most touching parts of her story is how she's remained active and independent. Supporting muscle maintenance, bone strength, and overall energy, a WFPB Nutritarian diet can keep us going strong through our later years.
All of this adds up to how a high-nutrient diet rich in antioxidants, phytochemicals, and fiber doesn't just fight disease, it slows the cellular aging process, which can translate into more quality years.

The recipe this week is a delicious Apricot Bar, made with lots of fresh apricots that are in full swing here in the Okanagan Valley now.

Apricot Bars
- ½ cup almonds
- 14 medium-sized dates
- 1 banana
- 2½ cups fresh apricots, large dice
- 2 teaspoons cinnamon
- 2½ cups rolled oats
- ½ cup walnuts (optional)
Preheat the oven to 350° F.
Add the almonds and dates to a food processor and process to a medium chunkiness.
Add banana, 1 cup (of the 2½ cups) apricots, cinnamon, 1½ cups (of the 2½ cups)) rolled oats and blend in thoroughly but not too much to keep the bars lighter.
Transfer the batter to a mixing bowl and fold in the remaining apricots, oats and walnuts (if using them).
Pour into an 8” x 8” baking dish and bake for 25 minutes.
NOTE: This batter can be used to make cookies too. Just reduce the amount of baking time to 15 minutes.
