A while ago a friend asked me if I was giving my well-being to potato chips. I reflected for a moment and knew that, in fact, I was. Why did I keep going to potato chips to feel a sense of relief if I felt a bit anxious or why did I reach for potato chips as a reward for doing something well?

So there you have it. If you keep having an urge for something you know isn't in your best interest, get quiet the next time the urge comes up. Lean in, and welcome it in warmly to share what it has come to share or teach you. The belief that fuels the urge is often revealed when we welcome the feeling in and are curious about what it has come to show us.

It's in the seeing of the belief that we become free. And it's so worthwhile to finally see how the whole story has been given life.

The recipe is Quick Cabbage Salad. It's quick to make, has lots of garbanzo beans to make it a filling one dish meal, and the dressing gives it great flavor. And you can have it raw one day and cook it for a whole new experience the next.

Quick Cabbage Salad (Serves 4)

  • 1 small cabbage, cut in fine, small pieces
  • 1 small red onion, small dice
  • 28-ounce can chickpeas, drained
  • 1 cup fresh parsley or kale, chopped fine

Dressing

  • juice of 1 large lemon
  • 2 garlic cloves, cut in pieces 
  • ½ cup apple cider vinegar
  • 6 pitted dates 
  • 1 tablespoon Dijon mustard
  • 1 teaspoon paprika
  • 1/3 cup filtered water

Squeeze the juice of the lemon into a small bowl and add the cut garlic to it. Let rest while prepping the salad ingredients.

Add all salad ingredients to a big mixing bowl and toss to combine.

Add the lemon juice and garlic to a high-speed blender along with the rest of the dressing ingredients and blend on high.

Pour dressing over the salad and mix well. You may want to let the salad rest an hour for the dressing to infuse its flavors.

Note: This is also good cooked. Enjoy it one day raw and the next day cook the leftovers for a whole new experience.
