Surprisingly delicious. The pomegranate adds lovely flavour and colour to this twist on a raw kale salad.
Raw Kale & Pomegranate Salad (Serves 2)
- 1 bunch Black Kale, washed well and cut in thin strips, then cut again to make fine pieces, no more than 1 inch long
- 1 ripe avocado
- 1 pomegranate
- 1/2 teaspoon sea salt (optional, replace with 2 teaspoons sumac)
- 1 lemon, juiced
Put cut kale in a bowl. Sprinkle sea salt or sumac over kale and knead. Set aside for 20 minutes to allow the kale to soften.
Cut avocado into chunky pieces and add to kale. Add Lemon juice.
Taste the kale and add additional sea salt if needed or additional sumac. Knead into kale pieces.
Toss and serve. Garnish each salad with Pomegranate. Gorgeous dish. Looks like Christmas for sure.
