Pumpkin Spice Cookies

This is an amazing cookie made from whole food ingredients that would be a great meal: yams, sweet potato, almonds, dates and rolled oats. All that in a cookie! No wonder we feel so good when we eat them.

Pumpkin Spice Cookies

  • 6 large or 8 medium dates
  • ½ cup almonds
  • 1 cup cooked yams / sweet potato or unsweetened canned pumpkin
  • 2 ripe bananas
  • ½ cup filtered water
  • 2 cups rolled oats
  • 2 teaspoons baking powder
  • 2 teaspoons cinnamon
  • 2 teaspoons pumpkin pie spice

Preheat oven to 350º F.

Add dates and almonds to a food processor and process to a chunky texture.

Add the yams or canned pumpkin, bananas and the water and blend into the dates and almonds, scraping down the sides as needed to get it all mixed well.

In a large bowl, add the remaining ingredients: rolled oats, baking powder, cinnamon, pumpkin pie spice and mix well.

Add the ingredients from the food processer to the bowl and mix thoroughly.

Shape about 3 tablespoons of batter into a cookie form for each cookie on a parchment lined baking sheet and bake for 25 minutes, or until tops feel firm.

Remove cookies from oven and place on cooling rack.

Pumpkin Pie Spice

  • 4 tablespoons cinnamon
  • 2 teaspoons ginger
  • 1 teaspoon nutmeg
  • 1 teaspoon allspice
  • ½ teaspoon ground cloves

Mix well together and store in a small container.
