Dinner is so delicious at our house. Almost every night it's a huge salad with lots of ingredients. We dress it with one of our oil free dressings from our website or we enjoy balsamic vinegar and nutritional yeast sprinkled on top. As we mentioned in the video, it's easy to make the salad really filling and satisfying by adding artichoke hearts, Winter squash, yam, sweet potato, red skin potato or whole grain. Your body will love you for making this as your evening meal. It is also a wonderful way to lose excess weight. If we eat light for dinner it supports our health and natural weight loss.

Dinner Salad (Serves 1)
- ½ head of Romaine lettuce torn small
- 1 carrot, sliced in diagonals
- 1 apple, cut in cubes
- ½ can artichoke quarters, rinse well and drain to remove salt
- ½ red pepper, diced
- ½ avocado, diced
- ¾ cup frozen corn
- Thin slices of red onion or 1 diced green onion
- ½ tomato, diced
Place all ingredients in a large open bowl starting with the lettuce, carrots, apple, artichoke hearts, red pepper, avocado, corn, onion and tomato.
Dress with 2 heaping tablespoons of oil free dressings available on our website.
And you can add cooked beans or lentils, cooked grain or starchy veggies like sweet potato or winter squash. This makes the salad real hearty in the cooler winter months.
