I just spent a week at the Optimum Health Institute (OHI). It's a great name for the facility when you think about how it is that we can achieve optimum health.

In our opinion, we achieve that by supporting our bodies to do what they're designed to do. As we've said before, we were born to thrive. Our bodies are designed to maintain a state of balance and vitality naturally. So, when we lose that balance and vitality, what has happened?

Almost always, when we lose our health and vitality it's the result of adding something that taxes the system, that over time our bodies can't stay up with and the system goes out of balance.

To support the body to regenerate and restore balance, we simply need to cut out the excess and ensure that what goes in is what our systems need to function smoothly.

This is what they do at OHI. They cut out all excess and put in all the essentials to reboot. It's essentially a controlled fast. It's low calorie, High Nutrient Dense (HND) whole food. By restricting calories, the body doesn't use as much energy to digest and that energy can be used to detoxify and rebuild.

The food is all raw, sprouted, fermented with lots of wheat grass juice included. It's all whole and organic.

The week starts with a day of the low calorie meals on Monday, and then we juice fast for three days. With the juice fast, our bodies have even less to digest, which provides even more energy to detoxify and rebuild. The final two days, Friday and Saturday, return to the low calorie meals.

An interesting thing is that the whole week of low calorie juice and food, I never felt hungry. We drank at least half our weight (in pounds) in ounces of liquid. So me, at 155 pounds, drank at least 78 ounces each day. This kept my belly full that helped keep the feeling of hunger away. Surprising to me, although some lost almost 20 pounds through the week (most of which was probably water) I only lost 1 pound. Go figure, eh? Our bodies are miraculous at maintaining balance.

On the other end, so to speak, we do an enema or have a colonic each day to ensure that we eliminate the toxins dumped into the colon.

It was amazing to see how effective this process is. It's where Connie went to shrink her large fibroid tumor, which resolved so quickly on this protocol after trying many other approaches.

It's a great testament to the power of the body to regenerate and the power of food to provide what's needed. We heard endless testimonies of people who have attended OHI for the past 47 years coming back from the "go home and die" diagnosis they got from their doctors.

I'm so glad I went and I wouldn't hesitate to do it again.

Smokey Cheddar Cheese From Molly Patrick

  • 1/3 cup rolled oats (not instant)
  • 3½ tablespoons nutritional yeast
  • 3½ tablespoons sunflower seeds
  • 1 2/3 tablespoons tapioca flour
  • 1¼ teaspoons garlic powder
  • 1¼ teaspoons onion powder
  • ½ teaspoon smoked paprika powder
  • ¼ teaspoon regular paprika powder
  • 1/8 teaspoon turmeric powder

Add all ingredients to a high-speed blender. Blend until a fine powder, about 20 seconds.

Then add the following ingredients to the powder in the blender, and blend until super smooth:

  • 1½ cups filtered water
  • 2 2/3 tablespoons red bell paper, diced
  • 1½ tablespoons pimento, drained
  • 2 teaspoons white or yellow miso
  • 1¼ teaspoons apple cider vinegar
  • 1¼ teaspoons lemon juice
  • 1¼ teaspoons Dijon mustard
  • ¾ teaspoon coconut aminos
  • Pinch ground black pepper
  • 1 drop liquid smoke (optional)

After blending, pour mixture into a saucepan and cook over medium heat, stirring frequently for 6 – 9 minutes. It becomes thicker and thicker. Stir constantly as it thickens until it is thick and gooey.

Pimento Cheese Sauce

  • 1 onion, diced
  • 1 cup raw cashews
  • ¾ cup rolled oats
  • ¾ cup filtered water
  • 6-ounce jar roasted red peppers, rinsed
  • ¼ cup nutritional yeast
  • 2 tablespoons lemon juice
  • 2 tablespoons vegetable broth (optional or use filtered water)
  • 2 teaspoons Dijon mustard
  • Pinch cayenne pepper of ½ teaspoon of Mrs. Dash Extra Spicy

Blend all ingredients in a high-speed blender. Transfer to jar and refrigerate. Will last 5 to 7 days refrigerated.

This is great on salads or over greens and veggies or over pasta.
