Mango Salsa Baked Potatoes

Deliciously simple baked potatoes, these make a wonderful whole meal with a simple salad added or serve well as a side dish to black beans.

Mango Salsa Baked Potato (Serves 2)

  • 3 medium potatoes or 3 medium sweet potatoes
  • 1 fresh mango or 1½ cups frozen mango cut in medium pieces
  • 1½ cups medium salsa
  • 1 red pepper, diced
  • 3 tablespoons finely diced red onion
  • 1 avocado, cut in chunks
  • (optional) lime slices

Bake potatoes at 425º F. for 1 hour

Mix mango, salsa, red pepper, red onion and avocado together.

Cut potatoes in half and cover with salsa topped with lime.
