Green Lentil Surprise

This is divine with the raisins. It is filling and tastes soooo good!

Green Lentil Surprise (Serves 4)

  • 1 large onion, diced small
  • 4 garlic cloves, minced
  • 4 cups green lentils, rinsed well
  • 4 carrots, cut in rounds
  • 1 red pepper, diced
  • 1 jalapeño, finely diced
  • 2 cups frozen corn
  • ½ cup raisins
  • 6 cups vegetable stock or filtered water
  • ½ teaspoon marjoram
  • ½ teaspoon turmeric
  • 1 tablespoon no salt seasoning
  • ¼ teaspoon freshly ground black pepper

In a large pan add onion, garlic and several tablespoons vegetable stock. Cook until onion begins to soften.

Add lentils, marjoram, pepper, turmeric, no salt seasoning and remaining vegetable stock, stir and cook for 20 minutes.

Now add carrot, red and jalapeño peppers. Stir and cook another 10 minutes.

Add corn and raisins, stir and cook until lentils are soft, another 5 to 10 minutes.

Serve and enjoy.
