Fruity Pico de Gallo

This is great served over torn Romaine lettuce. No dressing needed. Just enjoy spooning on the juices from this dish.

Fruity Pico de Gallo

  • *2 peaches, cubed
  • *2 cups of plums, cubed
  • 1 small or ½ red onion
  • 2 garlic cloves
  • 1 red pepper, diced
  • 3 jalapeño’s, fine dice
  • ½ bunch cilantro, chopped
  • 1 avocado, cut in cubes
  • 2 limes, juiced
  • Sea salt to taste (optional, replace with 1 tablespoon sumac)

Mix all ingredients in a large glass bowl. Add sea salt or sumac and mix.

Leave on the counter covered until ready to serve.

*Other fruits that are delicious are cherries and mango. Explore what might delight your taste.
