Sweet Edamame Cooked Slaw

Inspired from a night when there was no lettuce for a salad, this 1-dish meal is a sensation. Sweet, but not too sweet, this dish is packed with nutrients and flavours to satisfy every part of you.

Sweet Edamame Cooked Slaw (Serves 4)

  • 6-8 cups finely sliced purple cabbage
  • ½ red pepper, cut in matchsticks
  • 3 carrots, cut in matchsticks
  • ¾ cup edamame
  • ¾ cup raisins
  • 3 tablespoons filtered water
  • 1 apple, cut in cubes
  • 1 pear, cut in cubes

Add cabbage, pepper, carrots, edamame and raisins to a large pan. Add 3 tablespoons water and cook until beginning to become tender. Add apple and pear and cook until fruit is warmed.

Top with Ranch Dressing below and serve.

Ranch Dressing

  • 1 cup cashews
  • 1 cup filtered water
  • 1 lemon, juiced
  • 1 garlic clove
  • 1 teaspoon Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1 heaping teaspoon onion powder
  • 2 teaspoons dried dill
  • 2 teaspoons dried parsley flakes
  • 2 teaspoons chives
  • ¼ teaspoon ground black pepper
  • 1 teaspoon No Salt Seasoning

Add all to a high-speed blender and blend until smooth (approximately 60 seconds). Use to top Sweet Edamame Cooked Slaw above.

The leftover dressing is great on greens or salads.
