Peach Bars or Cookies

When it's peach season, there's nothing like these fresh Peach Bars. Sweetened to perfection with whole fruits, they've been described as irresistible.

Peach Bars or Cookies

  • ½ cup almonds
  • 12 medium-sized dates, pitted
  • 1 banana
  • 2½ cups fresh peaches, large dice
  • ¼ cup almond or peanut butter
  • 2 teaspoons cinnamon
  • 2½ cups rolled oats

Preheat the oven to 350° F.

Add the almonds and dates to a food processor and process to a medium chunk.

Add banana, 1 cup (of the 2½ cups) peaches, almond butter, cinnamon, 1½ cups of the rolled oats and mix thoroughly but not too much to keep the bars lighter.

Add the remaining peaches and oats and just pulse until they’re folded into the batter.

Pour into an 8” x 8” baking dish and bake for 35 minutes.

Optional: Lay ¼ inch slices of peach on top of the batter as decoration.
