Oil Free Caesar Dressing
- 1 cup raw cashews
- 2 garlic cloves, peeled and whole
- 4 tablespoons nutritional yeast
- 2 teaspoons vinegar (any vinegar is good)
- 1 fresh lemon or lime, juiced
- 1 heaping tablespoon capers, drained
- 1 tablespoon Dijon mustard
- 1 1/2 cups filtered water
- 2 tablespoons Tamari (for less salt, use coconut aminos)
- 1 tablespoon maple syrup or a handful of raisins
- Ground black pepper to taste
Place all ingredients in blender and blend until smooth. Serve.
Put leftover dressing in a glass jar and store in refrigerator.
