Oil Free Caesar Salad Dressing

Oil Free Caesar Dressing

  • 1 cup raw cashews
  • 2 garlic cloves, peeled and whole
  • 4 tablespoons nutritional yeast
  • 2 teaspoons vinegar (any vinegar is good)
  • 1 fresh lemon or lime, juiced
  • 1 heaping tablespoon capers, drained
  • 1 tablespoon Dijon mustard
  • 1 1/2 cups filtered water
  • 2 tablespoons Tamari (for less salt, use coconut aminos)
  • 1 tablespoon maple syrup or a handful of raisins
  • Ground black pepper to taste

Place all ingredients in blender and blend until smooth. Serve.

Put leftover dressing in a glass jar and store in refrigerator.
