Nice Cream

Sometimes in the hot summer months we like to have a cold, rich, refreshing dessert like ice cream, so we make some Nice Cream which is completely guilt free with it being both sugar-free and dairy-free. It goes great on top of a crumble hot out of the oven too.

Nice Cream 

Base

  • 2 bananas, frozen and sliced
  • 2 droppers stevia (I like Green Drops Vanilla Crème Stevia)

If you are using fresh fruit as a flavouring option, put it in the freezer for 1-2 hours before you make the nice cream to chill it really well but not freeze. You may need to stir it around after an hour so the fruit on the edges of the container don’t freeze hard

NOTE: you can use frozen fruit, but the texture may have a bit of an “icy” quality.

If you don’t have any bananas already frozen, for a quick ice cream, slice the bananas and freeze on a parchment covered baking sheet for at least 45 minutes.

If you are making just plain nice cream, use one or two more frozen banana with ½ teaspoon vanilla or ¼ teaspoon vanilla powder.

Put the frozen sliced bananas in a food processor and blend together until the mixture looks like soft serve ice cream (1-2 minutes).

Add your flavouring option and stevia and blend to the consistency you want, longer for smooth nice cream and shorter for fruit chunks.

For a firmer ice cream texture, you can put it all in the freezer for 30-45 minutes, stirring every 15 minutes so the edges don’t ice up.

chocolate crumble: finely chop the following ingredients in a food processor

  • ½ cup almonds
  • 2 dates
  • 1 Tbsp almond butter
  • 2 Tbsp cacao powder
  • 1 dropper stevia
