Mango Avocado Salad

This is so good. You will enjoy the variety of flavors and tastes. All of them great.

Mango Avocado Salad (Serves 3-4)

  • 2 cups cooked quinoa
  • 4 cups mango, fresh or frozen, cubed
  • 2 avocados, peeled and cubed
  • 3 cups cabbage, fine shred
  • 1 red bell pepper, diced
  • 1 English cucumber, diced
  • 1 bunch green onions, diced
  • ½ cup cilantro, finely chopped, or parsley
  • 3 limes, juiced
  • 2 heaping tablespoons date paste
  • Ground black pepper to taste

Place all ingredients except lime and date paste in a large bowl.

Add date paste to lime juice and mix well, then add to salad ingredients. Toss until well mixed.

Refrigerate or leave on counter for 1 hour and toss several times to be sure flavors are well combined.
