Edamame Surprise

So delicious and quick to make. This is a mainstay for us now.

Edamame Surprise (Serves 2-3) *adapted from Mary McDougall

  • ¼ cup vegetable broth
  • 1 tablespoon soy sauce (optional)
  • ½ teaspoon curry paste
  • 2 teaspoons no salt seasoning
  • 2 cups shelled edamame
  • 4 cups shredded cabbage
  • 2 cups frozen corn
  • 3 cups cooked brown rice
  • 2 fresh tomatoes, diced

Place broth, soy sauce, curry paste and no salt seasoning in a large pan and mix well.

Add edamame and cabbage and cook stirring frequently for about 4 minutes.

Add corn, tomatoes and rice and cook stirring frequently for another 5 minutes.

Serve and enjoy.
