Creamy Dill Dressing

This is so delicious and satisfying. A great way to get nuts into your diet.

Creamy Dill Dressing

  • 1 cup raw cashews
  • Handful of raisins, about ½ cup
  • 3 tablespoons nutritional yeast
  • 2 tablespoons vinegar
  • 2 tablespoons Coconut Aminos
  • 1 tablespoon capers
  • 1 tablespoon Dijon mustard
  • 1 lemon, juiced
  • 2 garlic cloves, peeled
  • ½ - ¾ cup of fresh dill, loosely packed
  • Ground black pepper to taste
  • 1½ cups filtered water
Add all ingredients to a high-speed blender and blend until smooth (approximately 1 minute). Enjoy on cooked greens, vegetables and salads.
Store in a jar in the refrigerator. Use up within 5 days.
