If you love apricots, you'll love these. Great for breakfast or as a snack or dessert.
Apricot Bars
- ½ cup almonds
- 14 medium-sized dates
- 1 banana
- 2½ cups fresh apricots, large dice
- 2 teaspoons cinnamon
- 2½ cups rolled oats
- ½ cup walnuts (optional)
Preheat the oven to 350° F.
Add the almonds and dates to a food processor and process to a medium chunkiness.
Add banana, 1 cup (of the 2½ cups) apricots, cinnamon, 1½ cups (of the 2½ cups)) rolled oats and blend in thoroughly but not too much to keep the bars lighter.
Transfer the batter to a mixing bowl and fold in the remaining apricots, oats and walnuts (if using them).
Pour into an 8” x 8” baking dish and bake for 25 minutes.
NOTE: This batter can be used to make cookies too. Just reduce the amount of baking time to 15 minutes.
