Adding Variety to Leftovers

To save time in the kitchen, when we cook beans, we cook enough for 3 days of meals. In order to not get bored with the same food, we look for ways to give them a unique taste each time we serve them. This video shows some of the things we do to accomplish that:

It's fun and easy. It can make a bean or grain or soup dish taste new and fresh each day we serve it. Be creative. The recipe this week is Pinto Beans and Brown Rice with onion, garlic, peppers, and Gusta vegan sausage. This is the recipe that we used to swing the large batch of beans and rice on the third day of our eating them. It is yummy!

Pinto Beans, Brown Rice and Vegan Sausage (Serves 2)

  • 2 cups cooked pinto beans
  • 1 cup cooked brown rice
  • 1 tablespoon avocado oil
  • 2 tablespoons purified water
  • 1 large onion, diced
  • 3 garlic cloves, minced
  • 2 red, orange or yellow peppers, diced
  • 2 jalapeño peppers, seeded and veins removed, minced
  • 1 Gusta or Tofurkey or Field Roast vegan sausage, cut in rounds
  • Sea salt and ground black pepper to taste

In a large skilled heat oil and water. Add onion and garlic and cook 5 minutes on low heat until onion becomes transparent.

Add peppers and cook until tender.

Add pinto beans and brown rice, vegan sausage and sea salt and black pepper. Mix well. Serve when dish is well heated .
