We talked last year about the idea that the Universe has your back, but how it doesn't always look that way when we aren't getting what we want. But when we look back on our lives, we see that when things weren't going our way, the difficulties were opportunities to open and grow more into our full potential.
Join us to hear more.
Many people we talk to often hear the phrase "The Universe has your back" as meaning "Things will go my way," or "I'll get what I want," or "Painful things won't happen." To us, the Universe has your back doesn't mean life always gives us what we want. It means life is always working with us, even when it’s challenging.
If you think about being supported, who is giving a child more support, a parent who gives their child everything they ask for, or a parent who helps the child grow?
When things don't go our way, and we are aren't getting what we want, can you see that there is an opportunity for insight, growth, or humility? This is how we develop resilience in life. When we begin to understand that sometimes the support of life looks like comfort and sometimes it looks like a wake-up call, we don't resist the things that at first don't please us.
I think we’ve all experienced that real support isn’t always immediate gratification. Looking back, Connie and I see that difficult times have resulted in some of the best, life-changing and growth events we’ve had. Like Connie having a mini-stroke and me ending up on a ranch in Canada.
You might say that life is more on our side than we sometimes realize. That not everything feels good, but everything can deepen us.
When we say the universe has your back, the gift is not always in the event itself, but in the consciousness, understanding, or capacity that emerges through it. The experience of growth in accessing more of our true potential, which is, on the deepest level, I think what we all really want the most.
The recipe this week is an Apple Rhubarb Cranberry Bread. It's rhubarb season here in the Okanagan, and we came up with this way of combining it with some of our other favourite fruits to make a tangy and delicious fruit bread. Give it a try.
To your Amazing Health,
Connie and Bill
Apple Rhubarb Cranberry Bread
- ¼ cup almonds
- 8 medium dates (e.g. Deglet Noor)
- 1 banana
- 1 cup oat flour
- 1 cup rolled oats
- 2 tsp baking powder
- ½ tsp baking soda
- 1 tsp cinnamon
- ½ tsp vanilla powder (optional)
- 1 apple, diced
- 1 cup rhubarb, chopped
- 1/3 cup dried cranberries
- 1/3 cup chopped walnuts
Preheat oven to 350°F.
Add almonds and dates to a food processor and process to a fine chunk. Do not let them ball up though.
Add the banana and mix in well.
Add flour, oats, baking powder, baking soda, cinnamon and vanilla, if using it, and pulse in well.
Add the apple, rhubarb, cranberries and walnuts and pulse to distribute throughout the batter.
Pour into 3 mini-loaf pans and smooth the top.
Bake 35 minutes, or until a toothpick comes out clean or nearly clean.
Let cool at least 20 minutes before slicing so it firms up.
