Bill Makes Dessert

As a kid, one of my favourite treats was an Orange Julius. There was something about the taste that was so unique and unlike any of the other drinks on the market so the occasional time we stopped for one, it was a delight. It was really special to me.

 

So, now, 70 years later, I decided to try to recreate the taste wonder I had when I was young and both Connie and I are proud of the recipe that arose.

Amazing how good this tastes with such a simple recipe: cashews, mango, oranges and vanilla. And it freezes well as a WFPB SOS-free dessert too, just like our Chocolate (Sweet Potato) Pudding does.

They're both delicious as puddings and excellent as nice cream. The Chocolate Pudding is like a fudgesicle.

Here's the recipe for the Orange Mango Pudding:

Orange Mango Pudding (based on the flavor of an Orange Julius)

  • ¾ cup cashews
  • 2 cups fresh or thawed mango
  • 3 oranges, peeled
  • small sliver of orange peel
  • ½ teaspoon vanilla powder

Add all ingredients to a high-speed blender and blend on high until smooth, 45-60 seconds.
